Egg-cellent Recipes!

Got chickens? If so, you've probably got an abundance of eggs! Here are five new egg recipes to liven up your recipe collection!

Farmer Casserole
8 eggs
1 lb browned sausage
1 pkg crescent rolls
1 diced bell pepper
4 c shredded cheese
2 tsp oregano
1 tsp Old Bay
Line bottom of glass dish with rolls.
Spread sausage on top of rolls.
Mix together eggs, cheese, pepper, and spices.
Pour into dish. Bake 25-30 minutes at 325.

Breakfast Pizza
4 scrambled (cooked) eggs
3 slices bacon (cut into pieces)
1 c salsa
1 Tbsp oregano
1 clove garlic, minced
1 pizza crust (not raw)
1 c shredded cheese
1 Tbsp oil
basil, rosemary, salt, and pepper (to taste)
Cook bacon, spices, garlic, and salsa 2 minutes in saute pan.
Spread on top of pizza crust.
Spread eggs on top of crust. Top with cheese.
Bake 10 minutes at 425.

Breakfast Casserole
6 eggs
12 strips bacon (cooked & crumbled)
1/4 c melted butter
3 c shredded hash browns
2 c shredded cheese
1 3/4 c milk
1 diced bell pepper
1 Tbsp mustard
Scramble eggs. Toss all ingredients (except cheese) together.
Top with cheese.
Bake 40 minutes at 325.

Egg Salad
12 hard boiled eggs
3 Tbsp mustard
1/4 c mayo
1/2 tsp Old Bay
6 oz chopped black olives
Crush eggs, and mix all ingredients together.
Top with black olives.
Chill 1 hr. (May use chives as garnish.)


Kimchi Eggs
2 eggs
2 Tbsp oil
1 c kimchi
1/2 c shredded spinach
Cook kimchi in the oil for 2 minutes.
Add scrambled (raw) eggs and spinach.
Cook and stir 2-3 minutes.

If you don't have chickens, why not investigate building your own coop to start a backyard flock? It's great fodder for animal studies, and will keep you in stock with lots of eggs!
