Jack-O-Lantern Bell Peppers

These cute Halloween dishes start out with leftover pulled pork.  I usually make up a large batch and set some of the leftovers back to freeze in quart-sized bags.  One quart bag will make four stuffed bell peppers...each of which will feed two people (or one hungry teen).

Make the jack-o-lanterns...
  • Using a fillet knife, carve your bell pepper into a jack-o-lantern.
  • Take artistic license with the barbecue sauce....bloody it up, if you like!
Crockpot Pulled Pork
Ingredients
  • 4 lb boneless pork loin
  • 1 cup orange juice (pulp free)
  • 1 cup apple cider vinegar
  • 1 tablespoon seasoning salt
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 cups barbecue sauce as desired
Directions
  • Place pork loin in a crockpot and pour juice and vinegar in.
  • Combine seasoning salt, garlic powder, onion powder, and black pepper and sprinkle over pork loin. 
  • Cover and cook on low 8 - 10 hours.
  • Shred with two forks, discarding excess fat. Mix in the remaining juices and coat with barbecue sauce as desired.
