Mmmmmmmmmmm! I love some gooey-yumminess of oatmeal cream, but they're so bad for me! After much playing around, we came up with these homemade ones. They don't last as long (no preservatives), but that hasn't proven to be an issue in this house yet!!
- 1 c softened butter
- 2/3 c brown sugar
- 1/2 c sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 c flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 c oats
Filling
- 3/4 c softened butter
- 2 1/2 c confectioner sugar
- 1 tsp vanilla
- 1 Tbsp milk
- Preheat oven to 350.
- Cream together butter and sugars. Add in eggs and vanilla.
- In separate bowl, mix flour, baking soda, salt, and cinnamon.
- Mix two bowls together well. Add in oats and mix well.
- You may choose to make traditional cookies, with a scoop, or lay the filling out in one large bar on the pan and cut them into square cookies.
- Bake 10-12 minutes (12-15 for the square cookies).
- Cool cookies completely before adding filling.
- Mix butter, sugar, vanilla, and milk until it creates a creamy mixture. (Approx 3-5 min)
- Spread cream filling on flat side of one cookie and top with a second cookie.
- Makes 10-12 cream pies.
Why are they healthier?
There are no preservatives or chemicals used to give these cookies a long shelf life. They are meant to be enjoyed in a relatively short period of time. Keep them in the refrigerator to extend their life.
Those could not be cuter! They also sound delicious...now I think I need to bake soon 😊
